Features: Intense ruby red color, of remarkable consistency. Fruity on the nose, ripe with red berries in jam, and then spices and licorice. Good body and structure, with soft and persuasive tannins. Persistent wine with spicy notes consistent with the olfactory characteristics.
Vinification and ageing: manual harvesting and selection of the grapes in small containers.
Sur-ripening in the vineyard. Natural fermentation with maceration on the skins for 10 days approximately with delestage daily and repeated manual pumping over.
Maturation in barrique first passage for 12 months - French oak not toasted.
Vinification in the absence of added sulphites.
All stages of production take place in the Elvira cellar up to bottling and labeling.
Match with: sweet salami, first courses with meat-based sauces, but also roasts and small game dishes, as well as medium or long-aged cheeses.
