Deep and balsamic like junipers on Mount Faeo
Features: deep purplish red color. On the nose, red fruits with spicy notes and a balsamic background of juniper and eucalyptus. Juicy and savory, almost saline, with a present but soft tannin.
Long persistence, it highlights sugared notes of red fruit and a lot of spice.
Vinification and ageing: manual collection and selection of our grapes in small containers.
Sur-ripening in the vineyard.
Natural fermentation with maceration on the skins for 10 days approximately with delestage daily and repeated manual pumping over.
Maturation in barrique for 12 months.
Vinification in the absence of added sulphites.
All stages of production take place in the Elvira cellar up to bottling and labeling.
