Nonno Peppino tuna is processed in compliance with the most ancient tradition, it is caught near the Sicilian coasts (Pescato di Sicilia), with the longline, a selective fishing method that safeguards other marine species.

Fishing takes place in two periods of the year, indicatively May-June and October-November. The tuna produced is marketed after a long seasoning of at least 3 or 4 months.
