500 g of purple cabbage
350 g potatoes
80 g of golden onion
Pepper as needed
750 ml. of vegetable broth
Extra virgin olive oil
Rinse the cabbage, remove the outer leaves and the hardest white rib. Divide it in half and cut it into strips.
Peel the potatoes and cut them into small pieces.
Chop and fry the onion in a saucepan with a drizzle of oil. When it starts to brown, add the cabbage and potatoes.
Add salt and pepper to your taste. Mix well and cover with a lid. Leave to cook for about 15 minutes over low heat.
Add the broth to cover everything and cook for an hour, always covered and over low heat.
When the vegetables are cooked, blend everything.
